CURRIED CHICKEN SALAD

Makes about 1 quart

2 chicken breasts, cooked and shredded (about 4 cups)
1⁄2 cup mayonnaise
1⁄4 cup olive oil
1⁄4 cup curry powder
1⁄4 teaspoon cayenne
4 scallions, sliced
1⁄2 cup red grapes, quartered

Combine all ingredients. Store in airtight container for up to 5 days.
Serve on toast.
